Homemade Snacks Hit Different…
If you’ve ever made your own snacks, you’ll know — it’s addictive. Not just the eating part (although this brittle is dangerously moreish), but the making. There’s something about stirring a pot of golden, bubbling caramel and hearing that satisfying crack when it cools that makes you feel like you’ve unlocked a secret homestead superpower.
As a mom, I love knowing exactly what goes into the food my family eats. No hidden preservatives, no mystery “flavourings” — just real ingredients, made with love. And if I can sneak in a few seeds alongside the peanuts for a boost of vitamins, minerals, and healthy fats? Even better.
Why You’ll Love This Recipe:
- Fast: You can make it in under 20 minutes.
- Versatile: Swap peanuts for almonds, cashews, or a mix of seeds.
- Kid-approved: Crunchy, sweet, and perfect for lunchbox treats.
- Shelf-stable: Keeps for weeks in an airtight container (if it lasts that long).
What You’ll Need:
- 1 cup sugar
- ½ cup water
- ½ cup honey
- 2–3 cups peanuts (I substitute 1 cup with mixed seeds for extra nutrition)
- 1½ tsp baking soda
- 2 tbsp butter
- 1½ tsp vanilla essence
Step-by-Step Method:
1️⃣ Start with the caramel — In a medium saucepan, combine sugar, water, and honey. Stir occasionally over medium heat until the sugar has dissolved, then let it bubble away.
2️⃣ Add your crunch — Once the syrup is hot and bubbly, stir in the peanuts (and seeds, if using).
3️⃣ Check the temperature — You’re aiming for 150°C/ 300°F (hard crack stage). Don’t have a thermometer? Try the cold-water test: drop a little syrup into a glass of ice-cold water — if it snaps when you bend it, it’s ready.
4️⃣ Work fast — Remove from the heat and immediately stir in the baking soda, butter, and vanilla essence. The baking soda will make it foam and give the brittle that airy crunch.
5️⃣ Spread & cool — Pour onto a parchment-lined baking tray and spread as thin as possible. Let it cool completely before breaking into pieces.
Crunchie Toffee Version:
Skip the peanuts and reduce the baking soda to ½ tsp — you’ll get a lighter, airy toffee that melts in your mouth.
Tips for Success:
Keep a bowl of ice water nearby for the temperature test.
Grease your spatula to make spreading easier.
Store in an airtight jar to keep it crisp.
