And honestly, I almost gave up on sourdough in those early days because I thought I had to do it all exactly right—long proofs, perfect shaping, cold fermenting, fancy Dutch ovens…Yeah, no thanks.

So, I thought it’s best I share my my no-fail Ciabatta Rolls for you moms who might be where I’ve been too many times..

My Sourdough Shortcut (Without Sacrificing the Flavor)

Here’s what I do when I forget to shape my dough, or life gets too busy to fuss:

I use the exact same dough I make for my artisan loaf.

Once it’s fermented (even a little too long), I just dump it onto the counter.

No shaping, no folding. Just cut it into bun-sized chunks, dust with a bit of flour.

Straight into the oven they go—no cold proof, no baskets, no stress.

And guess what?

They come out crispy on the outside, soft and airy inside, and absolutely perfect with soups, sandwiches, or slathered in grass-fed butter.

It’s the kind of recipe that makes you feel like a kitchen queen without adding more to your already full plate.
