Sourdough Chocolate Knots Recipe

Ingredients:

  • 1/2 cup (120g) active sourdough starter (bubbly and ready!)
  • 1/2 cup (120ml) warm milk
  • 1/4 cup (50g) sugar or honey
  • 2 1/2 cups (300g) all-purpose or bread flour
  • 1/2 tsp salt
  • 1 egg
  • 4 tbsp (60g) butter, softened

Side note: honey does tend to make the texture softer than when using sugar.

For the filling:

  • 1/4 cup (50g) butter, melted
  • 1/2 cup (100g) dark chocolate, finely chopped (or chocolate chips)
  • 2 tbsp cocoa powder
  • 2 tbsp sugar (or honey for natural sweetness)

For brushing:

  • 1 tbsp butter, melted
  • Optional: sprinkle of powdered sugar

Instructions:

1️⃣ Mix & Knead – Combine sourdough starter, warm milk, sugar, flour, salt, egg, and softened butter. Knead until smooth and elastic (about 8-10 minutes by hand or 5 minutes in a stand mixer). Cover and let rest for 8-12 hours at room temperature (or overnight) until doubled.

2️⃣ Prepare the Filling – Melt butter and mix with cocoa powder, sugar, and chopped chocolate.

3️⃣ Roll & Spread – Roll dough into a large rectangle (about 12×16 inches). Spread the chocolate filling evenly.

4️⃣ Twist & Knot – Fold the dough in half, then slice into strips. Twist each strip and tie into a knot.

5️⃣ Second Rise – Place knots on a lined baking sheet. Cover and let them rise for 1-2 hours until puffy.

6️⃣ Bake – Preheat oven to 375°F (190°C). Bake for 12-15 minutes or until golden brown.

7️⃣ Final Touch – Brush with melted butter and dust with powdered sugar if desired. Enjoy warm!
